Instructions

  1. Dough: In bowl of stand mixer fitted with dough hook, combine warm almond beverage, Organic Stevia and yeast. Let stand for about 10 minutes or until foamy.
  2. Stir together sunflower oil, flax seeds and vanilla; mix into yeast mixture on low speed. Combine flour and salt; gradually mix into yeast mixture. Mix on low speed for 2 minutes; scrape down sides of bowl. Mix at medium speed for about 5 minutes or until dough comes together.
  3. On lightly floured work surface, knead dough to form ball (dough should be slightly sticky). Transfer to lightly oiled bowl. Cover with plastic wrap and let stand for 60 to 90 minutes or until doubled in volume. Punch down dough. On lightly floured surface, roll into 18- x 10-inch rectangle, about 1/2-inch thick.
  4. Filling: Brush dough with oil; sprinkle with chocolate, Organic Stevia and cinnamon.
  5. Starting at one long end, roll up dough into log, pinching seams together; cut in half to make two logs. Working with one log at a time, cut in half lengthwise (splitting open to expose filling). Arrange halves side by side; pinch top ends together, then twist halves tightly around each other. Repeat with second log. Lay both braids side by side. Pinch top ends together and twist once to create one large decorative braid.
  6. Place in lightly oiled 9- x 5-inch loaf pan; cover with lightly oiled plastic wrap. Let stand for 60 to 90 minutes or until doubled in volume.
  7. Preheat oven to 375ºF; brush loaf with almond beverage. Bake for 35 to 45 minutes or until golden brown and puffed. Let cool in pan for 30 minutes. Turn out and let cool completely on rack or serve warm.

Tip: Sprinkle loaf with chopped walnuts, pecans or hazelnuts if desired.

  • 3/4 cup finely chopped dark chocolate
