Grilled Halloumi Cheese Salad with Tzatziki Dressing

Instructions

  1. Tzatziki Dressing: Whisk together yogurt, feta, lemon zest, lemon juice, Allulose Liquid Sweetener, oil, mint, parsley, garlic, salt and pepper.
  2. Salad: Preheat grill to medium-high heat; grease grate well.
  3. For the marinade:  Stir together Allulose Liquid Sweetener, olive oil, lemon juice, garlic, oregano, salt and pepper;
  4. Toss marinade with halloumi. Grill for 2 to 3 minutes per side or until well marked.
  5. Divide spinach between 2 bowls. Top with grilled halloumi, quinoa, olives, tomato, cucumber and red onion.
  6. Drizzle dressing over top.

Tip: Alternatively, broil marinated halloumi on foil-lined baking sheet for 2 to 3 minutes or until golden brown.
