Instructions

  1. Cinnamon Bun Topping: Stir together Wholesome Organic Erythritol, melted butter, cinnamon and vanilla; set aside.
  2. Cake: Preheat oven to 350°F. Grease and line 9-inch round springform pan with parchment paper; set aside. Whisk together almond flour, coconut flour, baking powder, xanthan gum and salt; set aside.
  3. Using electric mixer, beat together Erythritol and butter until light and fluffy. Beat in eggs, one at a time, incorporating each one fully before the next addition.
  4. With mixer on low, alternately add almond flour mixture in 3 parts with almond milk in 2 parts, starting and ending with almond flour mixture (scrape down side of bowl as needed between additions). Scrape batter into prepared pan; smooth top.
  5. Drop heaping teaspoonfuls of Cinnamon Bun Topping over cake batter; swirl into batter using tip of a knife or skewer. Bake for 45 to 55 minutes or until tester inserted into center comes out clean. If cake is browning too quickly, reduce temperature to 325°F. Let cool completely on rack. Remove cake from pan; transfer to serving plate.
  6. Cream Cheese Glaze: Beat cream cheese with Erythritol until light and fluffy. Beat in cream and vanilla until blended. Serve over cake.

Tip: Sprinkle toasted pecans or walnuts over cake if desired.
