Instructions

  1. Dough: Preheat oven to 375°F. Whisk together coconut flour, Parmesan cheese, Organic Erythritol, baking powder, Italian seasoning, xanthan gum, garlic powder and salt; set aside.
  2. In microwave-safe bowl, combine cream cheese and mozzarella; microwave on Medium, stirring every 30 seconds, for 1 to 2 minutes or until melted. Immediately add coconut flour mixture and eggs; stir together until combined.
  3. Using wet hands, mix together to form dough. Pat into disk; roll out to 15- x 9-inch rectangle, about 1/4-inch thick, between 2 sheets of parchment paper.
  4. Filling: Mix together tomato sauce and Erythritol; spread over rolled dough. Sprinkle Parmesan cheese over top. Top with mozzarella, ham, pepperoni and bacon. Starting from one long end, roll up tightly into log shape. Cut into 12 even pieces.
  5. Place roll-ups in greased 9-inch pie plate or baking dish. Bake for 30 to 35 minutes or until golden brown and bubbling. Sprinkle with basil. Serve hot or at room temperature.

Tips: Use your favorite Italian meats for the filling – try salami, capocollo, prosciutto, or try cooked ground meats like ground beef, ground turkey or Italian sausage.
