Keto Pumpkin Spice Cheesecake recipe

Instructions

 

  1. Crust: Preheat oven to 350°F. In bowl, stir together pecans, Erythritol, ginger, pumpkin pie spice and salt; add ghee and egg white, tossing until well blended. Press firmly into bottom of 9-inch springform pan. Bake for 10 to 15 minutes until golden and set. Let cool completely.
  2. Cheesecake: Reduce temperature to 325°F. Using electric mixer, beat cream cheese until smooth; beat in Erythritol, pumpkin pie spice and salt. Beat in eggs, one at a time, mixing on low speed after each addition until incorporated. Beat in pumpkin purée, cream and vanilla. Pour over crust.
  3. Bake for 50 to 65 minutes or until set but still slightly jiggly in center. Turn off oven; leaving door ajar, let cheesecake cool for 30 minutes. Run knife around rim of cake. Transfer to rack; let cool in pan completely.
  4. Cover and refrigerate for at least 6 hours or overnight. Remove cheesecake from pan.
  5. Whipped Cream Topping: Whip cream until soft peaks start to form. Sprinkle Erythritol over top; beat until stiff peaks form.
  6. Slice cake and serve with dollop of whipped cream and a tiny pinch of cinnamon.

Tip: Alternatively, blend cheesecake in food processor, pulsing to mix and scraping down side of bowl as needed.
