Roasted Curried Cauliflower

Instructions

  1. Preheat oven to 425ºF. Line baking sheet with parchment paper.
  2. Slice cauliflower into four 1-inch-thick steaks (reserve any extra cauliflower for another use) and arrange in single layer on prepared baking sheet.
  3. Stir together honey, curry paste, lime juice, oil, garlic, salt and pepper. Brush over cauliflower steaks.
  4. Roast cauliflower for 20 to 25 minutes or until golden brown and tender.
  5. Herb and Yogurt Dressing: Meanwhile, whisk together yogurt, lime juice, honey, cumin, coriander, salt and pepper.
  6. Drizzle dressing over cauliflower steaks. Sprinkle with chopped herbs.

Tip:

Leftover cauliflower florets can also be tossed in curry paste mixture and roasted until golden and tender.
