Stevia Cookies

INGREDIENTS

2 ¾ cups all purpose flour
1 tsp baking soda
½ tsp baking powder
1 cup unsalted butter, room temperature
1 ½ cup Wholesome Organic Stevia
2 cage free organic eggs
3 tsp vanilla extract
¼ tsp salt
Cooking spray (if not using Teflon pan)


INSTRUCTIONS

In mixing bowl, sift flour, baking soda and baking powder and set aside

In mixer with paddle, combine butter and Organic Stevia and mix on low speed until creamy

Add eggs one at a time and scrape the bottom of the bowl in between to avoid lumps at the bottom of the mix. Add vanilla

Add flour mixture and salt and mix on low until completely combined.

Remove from mixer and wrap in plastic wrap and refrigerate for 1 hour before using. Dough can be stored for up to 3 days in the fridge at this point.

Preheat oven to 325F

Remove dough from fridge and place on a liberally floured work surface. Roll to ¼’ thick.

Using desired cookie cutter, cut the cookies and place on a cookie tray (you will need a pan sprayed tray if not using a Teflon one) 3/4 ‘apart

Bake for 15-18 minutes or until light golden brown. Rotate the cookies halfway through the cooking process.

Remove and cool on a cooling rack.
