3/4 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 cup crushed bran flakes
1/3 cup Wholesome Organic Erythritol (or 1/4 cup Wholesome Organic Cane Sugar)
1 cage-free organic egg
3 over-ripe medium-sized Fair Trade bananas
1/2 cup Fair Trade chocolate chips or chopped nuts, if desired
Preheat the oven to 350°F. Butter and flour a muffin tin.
Whisk together whole wheat flour, salt, baking powder, baking soda, cinnamon and crushed bran flakes.
In separate bowl, beat together organic erythritol, the egg and bananas.
Slowly add dry ingredients to wet mixture. Don’t overmix. If you like, add in chocolate chips or nuts.
Fill muffin tins two-thirds full. Bake for 20-25 minutes, or until toothpick inserted in center of muffins comes out clean.
