4 tablespoons unsalted butter
½ cup Wholesome! Organic Dark Brown Sugar
½ vanilla bean, split, or ½ teaspoon pure vanilla extract
1 cinnamon stick
1 tablespoon brandy or other brown spirit (cognac, whiskey, rum)
1 tablespoon fresh lemon juice
2 bananas, sliced
Melt the butter in a small saucepan over medium heat until slightly bubbly. Add the organic dark brown sugar and stir it in with a wooden spoon. Add the vanilla bean (but not the extract, if that’s what you’re using) and the cinnamon stick and stir to combine and releases the vanilla seeds. Continue cooking until the sugar starts to caramelize, 2 to 3 minutes.
Carefully stir in the brandy and lemon juice, and continue cooking until the syrup becomes caramel-smooth, 2 to 3 minutes. Add the banana slices (and vanilla extract if using) and swirl to coat them in hot syrup and warm them, about 1 minute. Serve immediately. Optional: serve on top of your favorite vanilla ice cream, or dress up your pancakes, waffles or oatmeal.
