2 cups all-purpose flour
1 3/4 cups Wholesome Organic Cane Sugar
2/3 cup Fair Trade baking cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 cup organic milk
1 cup water
1/2 cup canola oil
2 large cage-free organic eggs
2 tsp vanilla extract
2 cups peanut butter and milk chocolate morsels, divided use
1 package (8 oz) cream cheese, softened
1 tsp vanilla extract
1/8 tsp salt
3 cups Wholesome Organic Powdered Sugar
Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.
For the cake, combine flour, organic sugar, cocoa, baking powder, soda and salt in large mixer bowl. Add milk, water, oil, eggs and vanilla extract. Blend until moistened. Beat for 2 minutes (batter will be thin). Pour into prepared pans. Sprinkle 1/3 cup morsels over each cake.
Bake for 25 to 30 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes. Remove to wire racks to cool completely.
For the frosting, microwave remaining morsels in small, microwave-safe bowl. Stir on medium-high power for 1 minute. Microwave at additional 10 to 20 second intervals, stirring until smooth. Beat cream cheese, melted morsels, vanilla extract and salt in small mixer bowl until fluffy. Gradually beat in organic powdered sugar. Frost between layers and on top and side of cake.
