Lemon Meringue Pudding


2 cups of milk
3/8 cup of whole meal breadcrumbs
1/2 stick of butter
1/4 cup Wholesome! Organic Light Brown Sugar
3 cage-free Organic eggs, separated
Grated zest and juice of 1 large lemon
1 tbsp Wholesome! Organic Sugar


Heat the milk to boiling point, then remove from the heat and stir in the breadcrumbs. Cover and leave to stand.

Beat together the butter, Organic Light Brown Sugar, egg yolks and lemon zest. Add the crumb mixture and stir well. Pour into a buttered 1 pint deep pie dish. Cook for 25-30 minutes at 350°F until set firmly.

Whisk the egg whites until stiff and gradually whisk in the Organic Sugar. Slowly trickle in the lemon jive, whisking all the time. Spread over the top of the pudding and cook for an additional 15 minutes until golden and crisp.
