Maple Baked Beans

GLUTEN FREE, NATURALLY VEGAN

INGREDIENTS

1 lb navy beans
1/3 cup vegetable oil
1 cup onions, chopped
1 green bell pepper, chopped
1 rib of celery, chopped
2-3 cloves of garlic, minced
1/3 cup Wholesome Organic Pancake Syrup
Wholesome-Organic-Pancake-Syrup
1/2 cup tomato puree or crushed tomatoes
2 tbsp Wholesome Organic Molasses
Wholesome-Organic-Molasses
2 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 1/2 tsp salt
1/4 tsp pepper
1 bay leaf
1/4 cup fresh parsley


INSTRUCTIONS

Soak beans overnight and boil according to package directions until tender. Drain, set aside.

In a large pot, heat vegetable oil and stir-fry onions, bell pepper, celery and garlic until tender. Add remaining ingredients, beans, and gently stir. Bring to boil and then turn heat to low and cover. Let simmer for 5-10 minutes.

Remove bay leaf before serving.

Pairs well with cornbread.
