3 packets unflavored gelatin
1 cup cold water (divided)
1 1/2 cups Wholesome! Fair Trade Organic Sugar
1 cup Wholesome! Organic Light Corn Syrup
1/4 tsp sea salt
1 tbsp vanilla
3 cups Wholesome! Fair Trade Organic Powdered Sugar, dusting and rolling
Fit an electric mixer with a whisk attachment.
Mix the gelatin and 1/2 cup of cold water in the mixer’s bowl.
Let the gelatin set.
In saucepan, mix the sugar, corn syrup, salt and 1/2 cup of water and cook over medium heat until the sugar dissolves.
Turn heat to high and cook until the syrup reaches 240°F on a candy thermometer or an instant-read thermometer.
Remove from the heat.
With the mixer on a low speed, while the sugar solution is still hot, pour the sugar syrup into the dissolved gelatin.
Then whip on high speed until the mixture is very thick for about 15 minutes. Add the vanilla and mix again until well blended.
Dust a 9-by-13-inch glass baking dish with the powdered sugar.
Spread the marshmallow mixture evenly into the dish and smooth the top.
Dust with more powdered sugar. Don’t cover.
Let stand about 12 hours to dry.
Sprinkle a cutting board with powdered sugar, then turn the marshmallow over onto it and cut into a chosen shape.
