Mulled Wine Ice Cream


1 bottle red wine
1/2 cup Wholesome Turbinado Sugar
8 cardamom pods
1 cinnamon stick, broken
1/2 cup dried cranberries
Grated zest of 1 orange
3 cups vanilla ice cream


Pour the wine into a pan and add the spices and sugar.

Bring slowly to the boil over a low heat.

Simmer gently for about 30 minutes until reduced to about 1/2 cup.

Strain into a bowl and stir in the cranberries and orange zest. Leave until cold and chill.

Tip the ice cream into a bowl and beat until softened.

Beat in the wine mixture and pour into a large bowl.

Cover and freeze.
