4 tsp unsalted butter
4 cups diced yellow onion
20 garlic cloves (minced)
5 cups tomato sauce
5 cups ketchup
3 cups Wholesome Organic Light Brown Sugar
1 ½ cups Wholesome Organic Molasses
4 tbsp liquid smoke
4 cups beef stock
4 tbsp Dijon mustard
2 tbsp sesame oil
2 tbsp dried oregano
2 tbsp dried savory
1 tsp ground cumin
4 pieces chipotle pepper from canned chipotle in adobo
fresh cracked pepper
In a large heavy bottomed saucepan, sauté onions in butter over medium heat until lightly browned.
Add in garlic and sauté for a couple more minutes then add the remaining ingredients and bring to a boil. Turn down heat and simmer on low heat for an hour or until desired thickness.
Carefully place into a blender or food processor in batches and blend till smooth.
Season with salt and pepper to taste.
Recipe Yield: 1 Gallon (Large Size Recipe intended for catering or foodservice occasions. Cut recipe in half or more for smaller yield.)
