For Stevia Cupcakes
½ cup butter-room temp
¼ cup Wholesome Organic Stevia
2 cage free organic eggs
2 tsp vanilla extract
2 cups cake flour
2 tsp baking soda
¼ tsp salt
1 1/3 cups buttermilk
Muffin pan and paper liners
For Stevia Cream Cheese Frosting
2/3 cup unsalted butter-room temp
1 cup cream cheese
1 tbsp Wholesome Organic Stevia
1 tbsp organic cornstarch
½ tsp vanilla extract
For Stevia Cupcakes:
Preheat oven to 370F
In mixer with paddle, cream butter and Organic Stevia to white and fluffy consistency.
With mixer on, add eggs one at a time and make sure to incorporate completely before adding the second one. Scrape the bottom of the bow.
Add vanilla and half the flour and mix just briefly.
Add remaining flour, baking soda, salt and buttermilk and mix to smooth.
Portion among muffin cups in muffin pan.
Bake at 370f for approximately 15-20 minutes or until springy to touch.
Cool completely before icing.
For Stevia Cream Cheese Frosting:
Combine Wholesome! Organic Stevia and cornstarch and set aside
In mixer with paddle, cream butter to smooth and fluffy
Add cream cheese and cream to no remaining lumps
Add Organic Stevia mix and mix on high for 2 minutes to activate the cornstarch
Scrape up bottom of the bowl, add vanilla extract and mix again for 2 minutes
Transfer to an airtight container and let set for 20-30 minutes before using
