DIRECTIONS:
FOR THE MARINADE & CHICKEN
Step 1
Soak wooden skewers in water for half an hour. This will prevent them from burning while they are on the grill.
Step 2
In a small saucepan over medium heat, combine the bourbon or coffee, soy sauce, Wholesome Dark Brown Sugar with Bourbon, hoisin sauce, rice vinegar, shallots, garlic, garlic powder and ginger. Bring to a simmer and heat until the mixture thickens slightly, about 5-7 minutes. Allow to cool slightly.
Step 3
Thread the chicken onto the pre-soaked skewers.
Step 4
Pour marinade over, reserving ½ cup for the dipping sauce base.
Step 5
Allow chicken to sit in the marinade for 30-60 minutes.
Step 6
Preheat your grill to a medium high setting.
Step 7
Grill skewers for 8-10 minutes per side, or until a thermometer inserted into chicken reaches 165 degrees.
FOR THE DIPPING SAUCE
Step 1
Take the remaining ½ cup of sauce and put it in a small saucepan.
Step 2
Add Sambal Oelek and Wholesome Bourbon Dark Brown Sugar and bring to a low boil.
Step 3
Simmer for 7-10 minutes, until the sauce has reduced by 1/3rd and has thickened slightly.
Step 4
Serve as a dipping sauce with Bourbon BBQ chicken skewers and enjoy.
