DIRECTIONS:
FOR THE TOPPING:
Step 1
Combine the butter and the light brown sugar together in a small saucepan over medium heat, whisking occasionally until the butter has melted. Cook for 1 minute, whisking constantly as the mixture thickens.
Step 2
Remove from the heat and whisk in the cinnamon and vanilla.
Step 3
Pour the mixture into a greased round 9x2 inch pie dish and arrange the apple slices neatly on top.
Step 4
Move to the refrigerator for a few minutes to help solidify the topping as you prepare the cake batter.
FOR THE CAKE:
Step 1
Preheat the oven to 350 degrees.
Step 2
In a medium sized bowl, whisk together the flour, baking powder, cinnamon, nutmeg, allspice and salt together. Set aside.
Step 3
Using a stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy, about 2 minutes.
Step 4
Add the Wholesome light brown sugar and beat on high speed for another 2 minutes. Scrape down the sides of the bowl with a rubber spatula as needed.
Step 5
With the mixer running, add in the eggs and vanilla and mix until combined.
Step 6
Pour the dry ingredients into the wet ingredients, and with the mixer on low speed, add in your milk.
Step 7
Beat until just combined - do not over mix. The batter will be thick!
Step 8
Remove topping from the refrigerator and pour the cake batter evenly over the topping.
Step 9
Bake for 40 minutes, tenting with foil halfway through to prevent the top from overbrowning.
Step 10
Allow the cake to cool for 20 minutes before inverting it from the pan and onto a cake plate. Serve immediately with vanilla ice cream.
