DIRECTIONS:
Step 1
Pre-heat the oven to 325 degrees.
Step 2
Fry the bacon in a large skillet over medium heat, until crisp, about 3 minutes. Remove the bacon from the pan and drain on paper towels.
Step 3
Leave the fat from the bacon in the pan, and use it to saute the onion and carrot for 5-7 minutes. Add the garlic and saute for another minute.
Step 4
Add the tomato paste and saute another couple of minutes, until the veggies are nice and caramelized. Add in the salt, ginger, dried mustard and paprika.
Step 5
Add in the apple cider, apple cider vinegar, molasses, rosemary and thyme sprigs and bring to a boil. Return the cooked bacon pieces to the pot.
Step 6
Reduce to a simmer and add the beans. Simmer for 5-10 minutes on the stovetop.
Step 7
Place beans in the pre-heated oven and bake, covered, for about 20 minutes.
Step 8
Remove the lid and bake for an additional 15-20 minutes. Enjoy!
