DIRECTIONS:
Step 1
Preheat oven to 275°F. Spray cookie sheet with non-stick cooking spray or grease with butter.
Step 2
Whisk together organic dark brown sugar, flour, and salt.
Step 3
In separate bowl, beat egg white with electric mixer until stiff. Fold sugar mixture into stiffened egg white. Add pecans and vanilla. Stir gently.
Step 4
Drop by teaspoonfuls onto greased cookie sheet . Bake in preheated oven until browned, 25 to 30 minutes.
Step 5
Cool 5-10 minutes on baking sheet, then remove to wire rack to cool completely.
