DIRECTIONS:
FOR THE TART:
Step 1
Preheat the oven to 400 degrees.
Step 2
Melt 2 tbsp of butter in a small glass bowl in the microwave.
Step 3
In a separate bowl, add melted butter to ½ cup dark brown sugar, cinnamon, cardamom, ground ginger, cloves, salt and vanilla extract. Whisk until combined and set aside.
Step 4
Roll out your puff pastry, and cut it down to fit into a rectangular tart pan. Use some extra puff pastry to make a double thick border around the entire rectangle.
Step 5
Using a pastry brush, brush the interior of the pastry with the butter spice mixture.
Step 6
Layer the sliced pears into the pastry and brush with butter spice mixture until it’s been all used up. Top tart with candied ginger pieces.
Step 7
Bake in a preheated oven for 24-28 minutes, until the pastry is puffed and golden in color.
Step 8
Allow the tart to cool completely before slicing into triangles and topping with fresh whipped cream and brown sugar candied walnuts (optional).
