DIRECTIONS:
Step 1
Preheat the oven to 325°F. Mix the graham cracker crumbs, 1/8 cup organic vanilla agave and butter. Mix together and press firmly into the bottom of a spring form pan. Bake for 6-8 minutes.
Step 2
Prepare the filling. Beat 1/2 cup organic blue agave, cream cheese and vanilla in a large bowl on high speed until blended. Add eggs, 1 at a time, mixing on low speed after each addition, just until blended. Add sour cream and mix. Pour into crust.
Step 3
Bake 1 hour and 10 minutes or until center is almost set. Turn off oven leaving door slightly ajar and leave the cake in the oven another 1 hour. Cool and refrigerate.
Optional: Top with fresh blueberries or your favorite seasonal fruit.
