2 cups self-rising flour
Pinch of salt
Pinch of ground allspice
4 tbsp butter
4 tbsp shortening
3 tbsp Wholesome! Organic Dark Brown Sugar
4 tbsp currants
1 tbsp grated lemon rind
1 cage-free organic egg
1/2 cup milk
Optional toppings: Wholesome! Organic Pancake Syrup or Wholesome! Organic Coconut Palm Syrup
For sprinkling: Wholesome! Organic Sugar or Wholesome! Organic Turbinado
Sift the flour, salt and spice into a mixing bowl and rub in the butter and shortening until the mixture resembles breadcrumbs. Add the Organic Dark Brown Sugar, currants and lemon rind.
Beat the egg and milk together and add to the dry ingredients to form a soft dough. Roll out lightly on a floured surface about 1/4-inch thick and cut into 2 inch rounds.
Cook on a hot floured griddle or heavy frying pan until golden on both sides. Sprinkle with Organic Sugar or Organic Turbinado. Top with Organic Pancake Syrup as desired.
