Lightened Chocolate Chip Cookies

INGREDIENTS

1 cup all-purpose flour
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, melted and at room temperature
4 tbsp Wholesome Organic Erythritol
3 tbsp Wholesome Organic Sugar
2 each cage-free egg yolks
½ tsp Wholesome Organic Molasses
2 tbsp organic whole milk
½ tsp vanilla extract
1 cup Fair Trade chocolate chips


INSTRUCTIONS

Preheat oven to 375°F.

Combine the flour, baking soda and salt in a mixing bowl and set aside. In another large mixing bowl, mix the butter, Wholesome Organic Sugar & Erythritol for a few seconds, then add egg yolks, organic molasses, milk and vanilla to that bowl and stir for 5 minutes until fully incorporated. Use more molasses for a chewier cookie. Pour in the dry ingredients and mix until the dough is smooth. With a spatula, fold in the chocolate chips.

On a parchment-lined baking sheet, spoon tablespoons of dough onto the baking sheet about 2′ apart. Bake 9-11 minutes or until the edges are golden brown. Remove from the oven and let cookies cool for 2 minutes. Using a spatula, remove them from the pan and place on a wire rack to cool completely.
