INGREDIENTS
4 cups raspberries
4 tsp Pomona Pectin Powder
1/2 cup water
4 tsp calcium water
1/2 to 1 cup Wholesome! Organic Raw Honey or Wholesome! Organic Blue Agave or 3/4 to 2 cups Wholesome! Organic Cane Sugar
INSTRUCTIONS
To make the fruit juice, mash raw fruit through fine sieve and collect juice or lightly mash fruit and simmer with a little water. Pour simmered fruit into a jelly bag, and let it drip until juice stops.
To make the calcium water, put 1/2 tsp white calcium powder and 1/2 cup water in a small jar with lid.
Store in refrigerator between uses. Lasts a number of months. Discard if settled white powder discolors or you see mold. Shake well before using.
To make the jelly, wash and rinse jars and let stand in hot water. Bring lids and rings to boil. Turn down heat and let stand in hot water. Measure juice into saucepan. Add calcium water and stir well.
Measure organic honey (or organic sugar or blue agave) into separate bowl. Thoroughly mix proper amount of pectin powder into honey. Bring fruit or juice to boil. Add pectin-honey or pectin-sugar. Stir vigorously 1-2 min. Return to boil and remove from heat. Fill jars to 1/4″ of top. Put filled jars in boiling water to cover and boil 10 minutes. Remove from water and let jars cool.
Lasts about 2-3 weeks in refrigerator after opening
