1 onion, minced
2 garlic cloves, minced
2 tbsp olive oil
1/4 tsp sea salt (optional)
1 tbsp chili powder
2 tbsp Wholesome Organic Molasses
2 tbsp Wholesome Organic Sucanat
4 tbsp balsamic or other vinegar
4 tbsp vegetarian Worcestershire sauce
1 cup ketchup
1 tsp Chalula, Tabasco or your favorite hot sauce
1 pound free-range organic chicken legs and breasts, washed and dried
In a medium saucepan over high heat, sauté the onion and garlic with the olive oil until soft. Add the remaining ingredients (except for the chicken) and 2 cups water. Mix well or blend in a blender for a few seconds. Simmer the sauce over medium-low heat for 30 to 60 minutes or until BBQ sauce reaches the desired thickness. Cool.
In a large bowl, cover the chicken with the sauce on all sides and marinate for 1 hour, refrigerated and covered.
Grill on medium-high heat, turning for 15 to 20 minutes on each side, until the chicken is cooked.
