Honey Cake


3 ⅓ cups all purpose flour

1 ¾ teaspoon baking powder 

1 teaspoon baking soda 

¾ teaspoon salt 

1 tablespoon ground cinnamon

¼ teaspoon ground allspice 

¼ teaspoon ground cloves 

¼ teaspoon ground nutmeg 

1 cup vegetable oil 

1 cup Wholesome Organic Fair Trade Honey 

1 cup Wholesome Organic Fair Trade Dark Brown Sugar

1 cup Wholesome Organic Fair Trade Cane Sugar

3 eggs 

1 teaspoon vanilla extract

1 cup strongly brewed tea 

½ cup apple cider


  1. Preheat the oven to 350 degrees. 
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, allspice, cloves and nutmeg. 
  3. Make a well in the center and add the oil, honey, both sugars, eggs, vanilla, tea and cider. 
  4. Using a strong wire whisk, stir together well to make a well-blended batter, making sure no pockets of air are stuck to the bottom. 
  5. Pour batter into well greased pan(s), and bake until toothpick inserted comes out clean. Start checking the cake 30 minutes after it goes in, but it could take closer to an hour to be done. 

Note: This cake was made in a special honeycomb silicone mold pan, but alternately you can make it in two 9-inch loaf pans, or two 9-inch round cake pans or 1-9×13 inch sheet cake.
