1 cup Wholesome! Organic Light Brown Sugar or Billington’s Light Brown Muscovado Sugar
1 cup self-raising flour
Pinch of salt
2 tbsp Fair Trade cocoa powder
14 tbsp of butter, softened, divided use
2 cage-free organic eggs
1/2 cup milk
1 tsp vanilla extract
1 cup Wholesome! Organic Powdered Sugar
Chocolate shavings or flakes, for decoration
Preheat the oven to 350°F. Grease and base line two 8-inch sandwich tins.
Mix the organic light brown sugar, flour, salt and cocoa powder together in a large bowl. Blend in 1 stick butter.
Beat the eggs, milk and vanilla. Add to the bowl. Stir well and pour into the tins.
Bake for 25-30 minutes. Cool on a wire rack.
For frosting: Beat the organic powdered sugar with the remaining butter until light and creamy.
Use half to sandwich the cakes together, then spread the rest over the top. Decorate with crumbled chocolate flakes.
