Sweet Holiday Yams

GLUTEN FREE

INGREDIENTS

1-1/2 lb fresh yams (sweet potatoes)
2/3 cup water
2 tbsp butter
1/4 cup Wholesome Organic Pancake Syrup or Organic Blue Agave
1/8 cup Wholesome Organic Sucanat or Dark Brown Sugar


INSTRUCTIONS

Preheat oven to 350 degrees.

Peel yams, cut into 3/4″ cubes, and place into a 2 qt oven safe casserole.

Add butter and water. Cover and bake on center rack for 35 minutes.

Add Wholesome Organic Pancake Syrup or Agave and stir.

Cover again and return to oven.

Bake additional 25 minutes or until yams are cooked through (a fork should pass easily into the center of the yams).

Remove from oven and cool for 10 minutes.

Place the yams in a blender with the Sucanat and puree until smooth.

Spoon into a bowl and serve.
